Dark roasted coffee beans

First, thank you very much to Ray Zarcone of divergent coffee to send us a pound of your company’s coffee, your signature Blend IV.

I do not know much about divergent coffee. I guess they are a young company, as they seem to have only a coffee, and the information limited on its website.
However, I do know that this coffee is a mixture of four different beans from various growing regions … Guatemala, Columbia, Peru and India.
And as you can see in the photo below, these are dark roasted beans. Very dark.

The truth is told, he was not sure what to expect from this very dark roast of a mixture of four different beans.
Anyway, on land and I have prepared the beans in our Breville Grind Control Brewer and let it feel for a few minutes before tasting.

And then we were surprised.
My wife is the best seeker of us two, and her first observations were definitely not taken from the official Coffee Cupper manual.

Pretty strange observations when it comes to tasting and checking a coffee. And keep in mind that you have reviewed hundreds of different cafes over the years.
After taking some sevens, I could see exactly what she wanted to say.
As I expected, many of the subtleties of taste that she could have expected from the four coffees individually were practically lost inside the mixture and as a result of the dark roast.
But what remains is really interesting and really good.
There is no doubt that this is a very bold coffee. But absolutely it is not hard or bitter. There is a bit of that iron first in a velvet glove that happens here.
Strong and soft, both at the same time.
Audaz and soft.
Dark and bright.
My wife’s final suggestion was that I do another cup, immediately.
In other words, she likes it. We both like it. Much.

She has still scratched her head a little, as it is very difficult to find the flavors of the components that make up the general flavor.
